The CBO Hybrid advantage
Choose your fuel. Control your heat. Two independently operated gas burners give you control beneath the hearth and inside the cooking chamber.
The thermostatically controlled sub-hearth burner heats the cooking floor from beneath. Adjust it independently to support the hearth temperature and baking result you’re after.
The ambient burner brings direct flame heat into the cooking chamber for browning, searing, and finishing. Run it independently or together with the sub-hearth burner.
Use gas for high-heat cooking with independent control of the hearth and chamber burners. Bake pizza, roast vegetables, or finish a cast-iron dish.
800°F+ gas capability
Cook with wood alone for a hands-on live-fire experience. Manage the fire, embers, and oven heat to suit the dishes you want to serve.
Wood-fired cooking in your Hybrid
Combine gas heat with a wood fire in the same oven. Give chefs another way to shape the cooking environment and add live-fire character to the menu.
Over 1,000°F with wood-assisted firing
Temperature capabilities vary with fuel, firing conditions, and installation. Follow the Commercial Hybrid operating instructions.
Start with the oven setup your operation needs. If a second or third oven is part of your future, allow for its space, support and utilities in the plan.
Menu first
Start with pizza size, the dishes you want to cook and your peak-service goals. We’ll help you compare oven options against the way your team plans to work.
1 → 2 → 3
A second oven lets you separate pizza from complementary dishes. Consider a two- or three-oven layout when your menu, available space and service plan call for it.
Replaceable components
Available replacement hearth, dome and Hybrid components support repairs over time. Leave the access your oven and enclosure need so future service remains practical.

CBO Tailgater Pizza Trailer

Bring your menu, peak-service goals and floor plan. We’ll help you compare oven configurations. Use the current model manual with your qualified project team to plan support, ventilation, utilities and service access.
Tell us your pizza size, menu and target orders during your busiest service period. Output depends on preparation, firing, baking and the way your team works—not oven size alone. We’ll help you compare cooking surfaces and discuss whether one oven or a multiple-oven plan fits your needs.
Choose a dedicated wood-burning oven when tending the fire is part of how you want to cook. Choose Commercial Hybrid when you want the option to use gas, wood or both in the same oven. Hybrid adds independently operated chamber and sub-hearth gas burners. Match the fuel, exact model and installation requirements to your business.
Compare the complete installed dimensions and weight with your layout—not just the cooking surface. Allow for support, clearances, ventilation, utilities and service access. Share your kitchen or vehicle drawings with CBO and your qualified builder before finalizing the installation.
Check the certifications and current manual for the exact model and configuration you are specifying. Commercial Hybrid and Residential Hybrid models have different intended applications; Residential Hybrid models are for outdoor residential use. Ask CBO to help identify the right oven, and have your qualified project team review the complete installation and local requirements.
We’ll quote the oven configuration and any CBO options you request. Confirm the included items, freight, availability and timing with your quote. Supporting construction, ventilation, utility work and installation depend on your site and should be scoped and priced with your project team.
Bring your menu, peak-service goals, fuel preference and kitchen or vehicle drawings. Your qualified project team should review support, clearances, ventilation, utilities and local requirements against the current model manual. Include those items in your budget and installation schedule.
CBO offers replacement components, including hearth and dome pieces. Hybrid installations also need access for servicing gas-system components. The work involved depends on the part and enclosure; use qualified service professionals for gas and electrical repairs.
Share your concept, location and timeline. You do not need to know your model yet—we’ll help you narrow the options and quote the oven configuration.
You don’t need a final model or finished drawings to send an inquiry.
