THE BIGGER, THE BETTER

With over 2,000 square inches of cooking space, the CBO-1000 Commercial Pizza Oven DIY Kit is the ideal high-output commercial oven. It uses three methods to cook efficiently: convection, radiant and conduction. 

Build the outdoor oven enclosure of your dreams in brick or stone to fit your individual style. This CBO oven is made of high-grade refractory materials that have alumina, silica and stainless steel fibers throughout the entire mixture. This mixture of materials helps prevent thermal shock, expansion and cracking.

The insulation blanket increases heat retention and the oven's unique shape creates a FlameRoll® which pulls the flame horizontally across the top of the dome and then vertically back down the side, creating higher temperatures for superior cooking. This design allows the oven to reach temperatures in excess of 1,000° F. 

After assembling your CBO-1000 DIY Kit, curing the oven before its first use is a critical, yet very simple, step. Here are instructions on how to cure a CBO Outdoor Pizza Oven.

How your oven cooks

Heat from every direction.

The low dome and vent draw flame across the dome and down the side — CBO’s FlameRoll™. Radiant heat, convection and conduction work together throughout the oven.

Convection

Heat that moves.

Air drawn through the opening heats inside the oven, moves toward the back and rises, then flows toward the flue. This continuous circulation carries heat through the cooking chamber.

Radiant heat

Fire and stored heat.

The fire and heat stored in the dome, walls and hearth radiate energy throughout the chamber. That retained heat keeps working as the oven cools.

Conduction

Heat through contact.

The hot hearth transfers heat directly to food or cookware in contact with it. Preheated cookware can then pass that heat directly to the food.

Heat from every direction.

We love out Chicago Brick Oven Pizza!

We love out Chicago Brick Oven Pizza!! We use it all year round and love the fact that it was made in the USA. The flame roll looks magnificent at night and is the center piece of our backyard. We wouldn't have considered any other oven than a CBO!
