Chipotle Shrimp and Pineapple Skewers

Chipotle Shrimp and Pineapple Skewers - Chicago Brick Oven

Pineapple brings sweetness, chipotle brings heat, and shrimp keeps these skewers at the center of the plate. Red onion and red pepper add another layer of flavor, while a separate honey-barbecue glaze ties everything together. This is a different direction from garlic-butter baked shrimp: a colorful, sweet-spicy option for your next meal around the oven.

Prep time: 20 minutes   Cook time: 10 minutes   Serves: 4

Ingredients

  • 8 wooden or metal skewers
  • 1 pound large shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1/4 cup orange juice
  • 2 teaspoons red chili powder
  • 2 cups fresh pineapple chunks
  • 1 red onion, cut into chunks
  • 1 red pepper, cut into chunks
  • 1 cup barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon chipotle peppers in adobo sauce, to taste
  • 1/4 cup chopped cilantro
  • Oil for lightly brushing the cooking surface

Marinate the shrimp and prepare the glaze

Combine the shrimp, garlic, orange juice and chili powder in a resealable food bag. Refrigerate while you chop the vegetables.

In a separate bowl, combine the chipotle peppers, honey and barbecue sauce. Set aside for brushing onto the skewers. Use appropriate separation and handling for raw seafood and serving utensils.

Assemble and cook

Thread the shrimp, pineapple, onion and red pepper onto the skewers. The source specifies soaking wooden skewers for 15 minutes.

The cookbook gives 350–400°F, with a preheated cast-iron grill pan or grill. Lightly oil the approved cooking surface, place the skewers on it and brush with the glaze.

Cook for about 2 minutes per side, until the shrimp are pink and the vegetables are tender. Check that the shrimp flesh is pearly or white and opaque rather than relying on the clock alone. Finish with chopped cilantro.
