Performance & construction
How your oven cooks
The low dome and vent draw flame across the dome and down the side — CBO’s FlameRoll™. Radiant heat, convection and conduction work together throughout the oven.
Convection
Air drawn through the opening heats inside the oven, moves toward the back and rises, then flows toward the flue. This continuous circulation carries heat through the cooking chamber.
Radiant heat
The fire and heat stored in the dome, walls and hearth radiate energy throughout the chamber. That retained heat keeps working as the oven cools.
Conduction
The hot hearth transfers heat directly to food or cookware in contact with it. Preheated cookware can then pass that heat directly to the food.
Illustrations show wood-fired cooking principles. Oven size and fuel equipment vary by model.

Cooked 20 pizzas to perfection last week. Guests loved them. Easy to start the fire, very little smoke. And the cover for it is a perfect fit and easy to apply and remove. Couldn’t be happier with everything.
I received my new CBO 500 on Monday of this week and it is an amazing beast! A very impressive and beautiful piece of American ingenuity and pride. As a small business owner and Veteran myself, it is important for me to buy QUALITY AMERICAN made products whenever possible. After much investigation and review of several “best pizza ovens” I called CHICAGO BRICK OVEN and spoke with Bob in customer service. After a 15 minute conversation with Bob, I knew I wanted to own a CBO 500. I am 100% satisfied with my purchase and the buying / delivery process. It is BEAUTIFUL and awaits its placement in my new outdoor kitchen. (Photos coming soon) Thank you Captain Lou
Mr. Cassidy is great to work with ….. thank you. Alan
I haven't used it yet but looks amazing
