Ingredients
- Pizza dough
- Chicken
- Cheddar cheese (sharp)
- Monterey Jack cheese
- Scallions
- Cilantro
- (2) 10-ounce bags baby spinach, washed thoroughly
- 3 ounces Canadian bacon
- 1 teaspoon dried oregano
Preparation
Preheat your oven to 750º. Grate and mix Cheddar and Monterey Jack cheeses (half & half). Cook chicken (or buy rotisserie chicken from market and strip into bite-sized pieces) and mix with BBQ sauce. Brush a thin coat of BBQ sauce over the entire pizza shell. Spread a generous coating of the cheese mixture over shell. Spread BBQ chicken pieces over pizza. Top-off with scallions and cilantro.
OPTIONAL: Drizzle a light coating of BBQ sauce over the pizza.
